This coffee comes from a Cooperativa de Servicios Multiples Sol y Café (Coop Sol y Café), a group of 59 local organizations of approximately 1,000 farmers. They are dedicated to protecting their environment by using sustainable farming practices. They collectively make agronomic and economic decisions to implement creative marketing strategies, to protect the environment, and to help their families and communities develop and progress. Coop Sol y Café hold both Organic and Fair Trade certifications, signifying that the farmers receives a minimum price with links directly with importers, creating long-term sustainability. An FT certification gives farmers better incomes, allowing them to hold on to their land and invest in quality. The Gonzilla estates are situated in the high Andes mountain range at an altitude of between 1,100 and 1,800 metres above sea level. The cool climate means that the coffee fruit matures more slowly allowing the flavours to develop inside the bean.
